A favor, if you don’t mind. My pork chops are always over-cooked. It’s difficult to cook pork because if it’s to be browned, it’s going to be very dry, while if NOT browned it’s either not fully cooked or it’s white and tasteless. When you want brown, juicy pork chops, the trick is to cook at high temperature. You should throw your pork chops in the pan when it’s already pretty hot (add some butter beforehand), let it brown (around 2 minutes), then flip it around, let it brown again (probably 1m30 this time, it’ll be quicker), and when it’s brown cover it, lower the temperature so that it won’t burn and let it like this for 2 more minutes.
Please note this will probably take a few trials and errors before actually getting the hang of it, but the results will blow you away.
P.S. If your pork chops are pretty big, you might need to let them cook for 5 minutes at low temperature in the end, instead of 2 minutes.
