Parmesan cheese is vegetarian, it’s not vegan.
Parmesan cheese contains an additive called rennet which comes from calf stomach, so it is neither vegetarian or vegan. You can find vegetarian alternatives or use nutritional yeast (vegan) as a comparable substitution.
Rennet is an enzyme derived from the lining of a calf’s stomach. Milk and butter are also animal produced products. Again, you are equating multiple types of vegetarians AND vegans. Some vegetarians eat eggs, drink milk, and butter their toast. And guess what they are still vegetarians. They take medication covered in gelatin capsules and wash their hair with shampoo (most of which have animal derived products). The enzyme rennet is the equivalent of gelatin to these type of vegetarians. They don’t eat the meat of animals but they do and have for generations used foods processed with animal derived or supplied ingredients.
